One of my favorite things about the Mediterranean is the food; vibrant veggies, fresh seafood and bold cheeses (yum!) If you like the flavors of a classic Greek salad, you're going to love this orzo. This easy recipe combines tender pasta, tasty shrimp and all the ingredients you know and love from a Greek salad. Ready for a colorful and delicious Summer meal? Read along Loleono lady!

You will need:

1 1/2  1 lb boxes orzo

1 1/2  bunches green onions, chopped

3/4 lb feta cheese, crumbled

3/4 cup chopped fresh dill

7 tablespoons fresh lemon juice

6 tablespoons olive oil

3 lbs uncooked medium shrimp, peeled

1 1/2 English cucumbers, quartered lengthwise and cut crosswise into 1/4-inch pieces

2 baskets cherry tomatoes, halved

1/2 English cucumber sliced into rounds

Fresh dill sprigs

To Make:

Cook orzo in a large pot of boiling water until tender (roughly 10 minutes). Drain, rinse with cool water and transfer to large bowl.

Add green onions, feta cheese, chopped dill, lemon juice and oil; mix well.

Cook shrimp in boiling water until pink (roughly 2 minutes). Drain, rinse with cool water and mix into salad.

Season salad with salt and pepper to taste.
