Pina Colada Muffins

Thank goodness it's Aloha Friday! Time to celebrate a successful week and all of the good times to come! Anyone else already feeling the sun on their skin? Ah, bliss! This week on Tropical Treats & Island eats we are featuring Pina Colada muffins, a total Loleono twist on this classic breakfast staple. Get your cup of Kona and island tunes ready babes, let's make this fun treat!

For the ingredients you will need:

-1 cup sugar 

-2 eggs

-1/2 cup butter softened

-2 cup sour cream

-2 tsp rum extract

-2 cups flour 

-3tsp baking powder 

-1 tsp baking soda

-1 tsp salt 

-1 14oz can crushed pineapple

-1 cup shredded and sweetened coconut

-24 cupcake liners 

Our bellies are seriously rumbling, or is that just the shore break? 

To begin you'll need to preheat the oven to 350. Next... 

1.) Beat the eggs, sugar, sour cream, butter, and rum extract like weekend waves crashing on shore, until thoroughly combined. 

2.) Mix in the flour, baking powder, baking soda, and salt.

3.) Put the pineapple and the coconut and shake it all up. Just kidding, stirring will do. 

4.) Put your cupcake liners in trays and fill 3/4 of the way with batter. 

5.) Bake for 25 minutes or until a toothpick comes out clean 

6.) Cool on a cooling rack and do a mermaid hair flip to celebrate because you are all done babe.
