Coconut Mousse

Happy Aloha Friyay to all you Tropical Goddesses! This week's Tropical Treats and Island Eats is almost as sweet as you are and we can't wait for you to try it! *Insert coconut drum roll here...* Coconut Lime Cheesecake Mousee in the house (or cabana). 

This recipe serves four, so be sure to double (or triple) the ingredients for more people (or yourself). No judgement here! 

For the ingredients you'll need: 

-2/3 cup heavy cream 

-3/4 cup powdered sugar divided 

-8 oz cream cheese 

-1/2 cup sweetened coconut flake + 1/4 cup shredded coconut toasted (for topping) 

-1 tsp vanilla extract

-1 tsp fresh lime zest 

-2 tbsp fresh lime juice 

-1 coconut cookie or graham cracker for garnish 

Directions: 

1.) In a large bowl, preferably with an electric mixer, beat the heavy cream until it begins to thicken. Gently add the powdered sugar as you mix. Do so until the ingredients are stiff enough to hold a peak *Surf lingo in a recipe? Love it! * Be careful not to over stir to avoid clumps! 

2.) Scoop the mixture into a separate bowl and place in the refrigerator. In the empty mixer bowl, add the cream cheese and beat until smooth, like sand on a windless day. Continue mixing and add the remaining 1/2 cup powdered sugar. 

3.) Add the vanilla, 1/2 cup coconut, lime zest and lime juice into the mixture and blend well. Pause the mixing and add around 1/2 of the whipped cream. 

4.) Blend on low for just a few seconds. Add the other half of the whip cream and continue to blend on low, or fold in gently with a spatula. Again, you don’t want to over mix, just until the ingredients are blended well.

5.)Spoon the mixture into dessert dishes and place in the fridge while you toast the coconut for garnish. Toss the coconut on a baking sheet and spread out evenly. 

6.)Bake at 300°F for 3-5 minutes. Watch it carefully...like a good SPF. We want the sun, but to avoid getting totally fried. Once sunkissed, move to a cool plate to cool for a few minutes before adding to desserts. 

7.) It’s time to transport your tastebuds! Grab your pre-scooped desserts from the fridge and garnish with toasted coconut, a thin lime slice and a coconut cookie.
