Pumpkin Ginger Pound Cake | The Perfect Thanksgiving Dessert
Aloha Loleono ladies! This week on the blog, we’re embracing the flavors of the season with a Pumpkin Ginger Pound Cake. This delectable dessert is easy to make and will have your guests returning for seconds (I won’t judge if you make an extra one for yourself, just double this recipe).
Before you begin, you will need the following ingredients:
- 1 Cup of butter (softened)
- 2 ½ Cups Flour
- 1 ½ tsp Baking Powder
- ½ tsp Salt
- 1 ½ tsp Cinnamon
- ½ tsp Ginger
- ¼ tsp Nutmeg
- ¼ tsp Ground Cloves
- 4 Eggs (separated)
- 2 tsp Vanilla Extract
- 2 Cups Brown Sugar
- 1 Cup Pumpkin
- ¼ Cup Vegetable Oil
- 2 tsp Fresh Ginger
And now for the fun part:
- Preheat oven to 350°
- Beat egg whites with a pinch of salt, set aside.
- Cream butter and add brown sugar and vanilla extract. Beat for roughly 4 minutes.
- Add egg yolks, oil, pumpkin and fresh ginger.
- Fold in flour ⅓ at a time.
- Fold in egg whites.
- Spray bundt pan with nonstick spray and pour in mixture.
- Bake for 45-50 minutes.
Allow the pound cake to cool (the hardest part, I know) then dive in with a cup of Kona coffee or some spiced cider. Enjoy!
