Vegan Coconut Pancakes with Mango Sauce

Aloha Friyay! We can't wait to celebrate the weekend with our launch of Tropical Treats and Island Eats! Up first?! The island breeze is calling with these delicious and bright, Vegan Coconut Pancakes with Mango Sauce. Um...yum!

Here is a list of ingredients you’ll need for the pancake batter: 

-1 1/2 cups white spelt or all purpose flour

-1 3/4 tablespoons baking powder

-2 1/2 tablespoons organic cane sugar

-1/8 teaspoon salt -3 tablespoons unsweetened shredded coconut

-1 2/2 cups non-dairy milk (coconut milk recommended)

-2 1/2 tablespoons coconut oil melted 

-1 tablespoon vegan butter spread for the pan 

For the sauce you'll need:

-4 mangoes peeled and sliced (If you don’t have access to fresh mangoes you can always buy them in the frozen aisle and let them thaw out)

-2 tablespoons of water

-Sweetener of your choice (we’re going with honey for this one)

Now, let the cooking begin… 

1. Combine the flour, baking powder, sugar, and unsweetened shredded coconut in a large bowl and mix together creating a smooth, powdery consistency. 

2. Grab your coconut oil and non-dairy milk to add to the dry ingredients and mix until smooth. 

3. Set your combined ingredients aside and let them love each other for a few minutes while the batter puffs up. 

4. Grab your frying pan and coat it with vegan butter over medium heat. Once the butter starts talking, you’re good to get your pancakes on the pan. 

5. After 3 minutes, flip the pancakes and cook an equal amount of time on the other side. They should be golden brown, like glowing skin after a nice long day at the beach. 

Let’s not forget about our sauce! It’s simple, so those multi-taskers out there can make this while the pancakes are a cakin’. 

1. Combine all of your sauce ingredients in a food processor or blender and blend until they reach sauce consistency.

Get those hot cakes on a plate, drizzle with mango goodness, and taste the sunshine. Make sure to tag us with your creations!
